For centuries, civilization in rural Italy and from poor areas where the main source of income was from agrigoltura, pigs have been reared and slaughtered as provided meat and fat, the meat was stored in the form of sausages , fats used for seasoning foods. This practice, or rather this tradition also held a role as important social value, because it was a time to meet and socialize with family and friends intervened before the processing of pork and then, finally, is organizing a convivial time, during which is cooked and consumed certain parts of animals. Nowadays things have changed, unfortunately, this practice of raising pigs is decreasing more and more over the years.
